Cream Cheese Frosting
1/2 cup salted, sweet cream butter, softened
1 8oz package cream cheese, softened
6 cups confectioner’s sugar
1 tsp pure vanilla extract (optional)
1/3 cup heavy whipping cream
Cream butter and cream cheese for 30 seconds on stir speed. Scrape sides and bottom of bowl and beater, then cream for 60 seconds on medium. Add 4 cups of sugar on mix speed until incorporated, and then bring up to medium for about 15 seconds. Scrape sides, bottom and beater and then alternately add whipping cream and sugar. Scrape sides, bottom and beater and beat at medium-high for 60 seconds. Store any unused frosting in the fridge for up to a week.
This works great for cupcakes and cookie sandwiches. We like our frosting thick, so sometimes I double it! Oh, and it does dry fairly quickly…if adding sprinkles or decorations to cupcakes only work with 4 at a time or so, or the decorations will bounce right off!
