Look at that creamy goodness! These have been elevated to near chocolate chip cookie status around here! Cream Cheese Oatmeal Cookie Sandwiches!

Here is the link to Quaker Oatmeal's Vanishing Oatmeal Raisin Cookies. I did not alter the ingredients in any way…I know! Shocking!
I did, however, use a larger scoop to make my cookies and found that for my oven 14 minutes made the cookies baked well. My cookies are large, about 3 to 4 inches diameter.
The frosting recipe is… not on my blog yet, as I thought it was. I will quickly remedy that…okay, now the frosting recipe IS on the blog and you can find it here - cream cheese frosting.
Ok, so with both the cookies and frosting made, you are ready to assemble your cookies.
First, layout all of your cookies, matching pairs by size and shape as much as possible. Turn one cookie bottom side up for each pair.
Next, put the frosting into a gallon size ziploc freezer bag and trim off the tip. Piping the frosting onto the cookies is quick and clean compared to trying to spread the frosting onto the cookies. Plus, you have better portion control. You can use a decorator tip if you choose.
Then, start at the outside edge of the cookie and pipe a thick swirl onto your turned up cookies.
Finally, place the “top” cookie on top and gently squeeze. If you didn’t quite pipe up to the edge, then this is the time to get the frosting close to the edge, with your gentle pressure.
That’s it! Easy peasy! Now, just fill up that glass with milk or make your latte and enjoy! You deserved it.
