These bars are luscious and gluten-free, but not calorie free!
Makes 32 servings.
Crust
4 cups oat flour
1/2 cup sugar
3/4 cup butter or coconut oil
Filling
2 cups sugar
6 eggs
6 TBSP rice flour
3/4 tsp baking powder
9 TBSP lemon juice
Powdered sugar for dusting
Heat oven to 350F.
(I lined my pan with parchment so I could easily remove the bars for cutting.)
Combine all CRUST ingredients and beat at low peed until mixture is crumbly. Press onto the bottom of an 11x15” pan and bake for 15 minutes. While it is baking combine all ingredients for filling, beating until well blended and pour the filling over the hot crust (once it is done baking, of course!) Put the bars back into the oven for 15 to 20 minutes, or until the filling is set. Sprinkle with powdered sugar and cool. At this point you could remove them from pan using the parchment and cut them into triangles for pretty presentation. Serve them with some fresh raspberries!
